These cheese fritters are light and loaded with cheese flavour. Quite delicious served as an appetizer, especially when accompanied by a classical hollandaise sauce.

8 egg whites
750 ml (3 cups) grated Parmesan cheese
white pepper
oil for deep frying

1. Heat the oil to 180 ºC (350ºF).
2. Beat the egg whites until stiff and stir in the grated cheese. Season well with white pepper.
3. Gently drop tablespoonsful of the mixture into the oil and fry until puffed and golden. Drain on kitchen paper and serve at once in a linen napkin lined basket.
