ROSE WATER TURKISH DELIGHT

I’ve tried on numerous occasions to make Turkish Delight, to no avail. All the recipes listed gelatin as an ingredient and we invariably ended up eating the lush jelly with spoons. But now I’ve hit the jackpot. You will need a candy thermometer to get the sugar syrup at exactly the right temperature. A little effort, but if you are as passionately fond of this Middle Eastern sweetmeat as I am, it is worth it.

1000 ml (4 cups) sugar
1060 ml (4 1/4cup) water
15 ml (1 tablespoon) lemon juice
250 ml (1 cup) cornstarch
5 ml (1 teaspoon) cream of tarter
22,5 ml (1 ½ tablespoon) rose water
a ! of red food colouring
For dusting:
60 ml (1/4 cup) cornstarch
250 ml (1 cup) icing sugar
Grease and line a loaf pan with wax paper. Grease the wax paper.
1. Combine sugar, 1 ½ cup water and the lemon juice in a medium saucepan. Stir over low heat until the sugar has dissolved. Bring to a boil and don’t stir again until it the sugar syrup reaches 116 ºC (240 ºF). That is soft ball stage.
2. While the syrup is boiling, combine the cornstarch, cream of tarter and the remaining 2 ¾ cups water and mix until smooth. Transfer to a medium saucepan and cook over medium heat until it comes to a boil and turns glue like. The glue mass will pull away from the sides of the saucepan.
3. As soon as the sugar syrup reaches the correct temperature, add the cornstarch glue and stir constantly over low heat for about 5 minutes until the mixture is smooth. Simmer over low heat, stirring frequently, until the mixture has a golden colour. It will take about 1 hour. Stir in the rose water and a ! of red food colouring. Mix well.
4. Pour the Turkish Delight into the prepared tin and spread evenly. Let it cool over night.
5. Sift the ¼ cup of cornstarch and icing sugar twice.Turn the Turkish Delight out of the pan onto a cutting surface. Cut the Turkish Delight into squares (scissors works well) and coat with the icing sugar mix. Store the Turkish Delight in a cool, dry place. (Not in the refrigerator)
